Mixed Fruit and Nut Bread

This is something I like to make when the weather begins to get a little colder - it's excellent served warm, straight from the oven or toasted the next day with appropriate levels of butter!



Mixed Fruit and Nut Bread

2-3 bananas, mashed
2 beaten eggs
¾ cup orange juice
¼ cup milk
30g melted butter
100g brown sugar
300g self-raising flour
½ teaspoon cinnamon
¼ teaspoon mixed spice
150g dried apricots, chopped roughly
100g pecans, chopped roughly



Preheat the oven to 180°C/350°F.

Butter and flour or line a loaf pan with baking paper.

Place the mashed bananas into a bowl, add the beaten eggs, stirring to combine. Then add the orange juice, milk, melted butter, spices and sugar, stirring after each addition.

Sift the flour, then add to the wet mixture. Finally fold through the apricots and nuts.

Pour into the prepared loaf pan and bake for about an hour, check midway to make sure it's not browning too quickly - adjust the temperature if it is.

Place on a cooling rack and dust with icing sugar.

I did manage to capture this rare picture before it was swooped away and eaten.
